So many squash!
It started as a place to exhibit groundcovers…or at least that was our plan a year ago.
We planted a beautiful ornamental (and edible) strawberry variety last summer to achieve that very goal (along with some creeping phlox and ajuga). Though the ajuga and phlox have done well , the strawberries were really what sparked a new idea.
We enjoyed being able to walk by and snack on berries all summer so much that we joked about planting the whole slope with edibles. And then one day this spring, Julie just planted her onions, tomatoes, peppers, and a few other veggies up there, and the whole plan unfolded before us. Kelly threw in her squashes, Michelle put in some oregano, and the veggie slope has gotten way more comments than the groundcovers ever did.
Kelly’s squashes were really what caused it – they have grown like crazy and put on so many fruits that she at first wondered what to do with them. Here’s the plan: next year we are donating the excess to the food pantry! Definitely is something to think about if you and your family are (like us) suddenly faced with 25 pounds of extra butternut squash!
